The showcase is the shop. It has to look full and cold from across a concourse, which means the display case, the condenser ventilation and the back-up freezer are the first things we plan, not the last. Get the cold chain wrong and the product loses its shine within an hour of a hot afternoon. We engineer the refrigeration and the finish together so the display sells and the stock stays safe.
