The counter is the engine. Its layout sets how fast a barista can serve at peak, so we plan the machine, the grinder, the till and the pickup point around real service flow before anything is built. Seating and lighting then do the softer work of dwell time and photography. Because we run design, civil, MEP and fabrication in-house, the counter that looks right on the drawing is the counter that actually works on opening day.
